Overview
This day begins before the city wakes. At Cai Rang, the Mekong's most atmospheric floating market, boats loaded with pineapple, watermelon, and vegetables drift and cluster in the early mist — vendors calling across the water, the smell of coffee and broth rising from makeshift kitchens on deck. It's best seen at dawn, when the trading is at its peak, and you'll eat breakfast here: noodle soup and Vietnamese coffee on the water. From there, the day slows down. The three-hour drive south to Tra Su takes you deeper into the delta, through flat green countryside that feels a world away from the city. The cajuput forest is one of the few intact wetland forests left in the Mekong region — a dense, quietly beautiful place crossed by narrow waterways choked with lotus and floating plants. You'll move through it first by motorboat, then by paddle boat, close enough to the water to hear the birds before you see them. White storks nest here in large numbers and return in the late afternoon. Lunch is served in the forest itself, with local dishes drawn from the surrounding region.
